Meet Our Chef
Chef Cristian Flores brings heart, heritage, and over two decades of culinary experience to Bistango. Originally from Santiago, Chile, Cristian moved to the U.S. at just 13 years old. He went on to study at Le Marmite Culinary in New Jersey and built his career across esteemed kitchens throughout New Jersey and New York — from Trap Rock Restaurant and Brewery to Princeton University and Bloomberg Corporation.
With a New York State Culinary Instructor degree and a passion for farm-to-fork cooking and butchery, Chef Cristian leads our kitchen with a commitment to quality and creativity. His deep knowledge, love for seasonal ingredients, and dedication to teaching shine through in every dish we serve.

Is your entire menu gluten-free, or only certain items?
Our entire menu can be prepared gluten-free. Please let our team know when ordering so we can take all necessary precautions.
Is your kitchen 100% gluten-free?
Our kitchen is not 100% gluten-free; however, we follow strict procedures to safely avoid cross-contamination. We have a 100% dedicated gluten-free pizza oven, two separate fryers (one exclusively for gluten-free items), and a dedicated grill for gluten-free preparation.
How do you prevent cross-contamination in the kitchen?
We use separate cooking water for gluten-free pasta, dedicated cutting boards, and specific utensils. Gloves are changed between preparations, and work surfaces are carefully cleaned and sanitized between each dish.
Is your gluten-free pasta made in-house or sourced from a dedicated gluten-free facility?
Most of our gluten-free pasta is made in-house. We also use select gluten-free pasta from a dedicated facility, including La Veneziana, which is widely recognized as one of the best gluten-free pasta producers.
Do you offer gluten-free options for dessert?
All of our desserts are gluten-free.
Are gluten-free dishes prepared differently from regular dishes?

Yes, we offer both takeout and delivery. You can find us on DoorDash or place an order for pickup. All gluten-free orders are packaged in sealed, safe to-go containers.

Yes. While our staff is well trained and always asks about allergies before processing an order, we encourage guests to inform us when ordering.
