Our Story

A hidden gem within The Kimberly Hotel, Bistango is a celebration of thoughtful dining and genuine hospitality. Since opening our doors in 2014, we’ve remained committed to crafting seasonal cuisine that feels both timeless and personal—where every ingredient is chosen with care, and every dish is made from scratch.

Our kitchen is entirely gluten-free, with a dedicated space ensuring a safe and seamless experience for our guests. But what truly sets us apart is our belief that dining is about more than just food—it’s about comfort, connection, and the simple joy of gathering at the table. Whether you’re here for a quiet lunch or an evening with friends, Bistango is a place to feel at home.

Meet Our Chef

Chef Cristian Flores brings heart, heritage, and over two decades of culinary experience to Bistango. Originally from Santiago, Chile, Cristian moved to the U.S. at just 13 years old. He went on to study at Le Marmite Culinary in New Jersey and built his career across esteemed kitchens throughout New Jersey and New York — from Trap Rock Restaurant and Brewery to Princeton University and Bloomberg Corporation.

 

With a New York State Culinary Instructor degree and a passion for farm-to-fork cooking and butchery, Chef Cristian leads our kitchen with a commitment to quality and creativity. His deep knowledge, love for seasonal ingredients, and dedication to teaching shine through in every dish we serve.
